WW Crockpot Pork Stew
Prep Time: 20 Minutes.
Cooking Time: 7 to 8 Hours.

INGREDIENTS:

1 (2 lb) boneless pork shoulder, cut into 2" pieces
1 (10.75 oz) can condensed French onion soup
1/2 cup apple juice
3 large Jonathan or
Granny Smith apples, sliced thick

3 cups butternut squash, peeled, seeded,
cut into 2" pieces

2 medium size parsnips, peeled, cut in 1" pieces
1/2 tsp dried thyme leaves, crushed




DIRECTIONS:

1. Stir the pork, soup, apple juice, apples, squash, parsnips and thyme into a 6 quart slow cooker.

2. Cover and cook on LOW 7 to 8 hours or until pork is fork-tender.

NOTE:
For thicker gravy, stir 1/4 cup flour and 1/2 cup water into a small bowl until mixture is smooth. Stir
the flour mixture into the slow cooker. Cover and cook on HIGH for 10 minutes or until the mixture boils and thickens.

YIELD: 8 Servings
Serving Size = 1 Cup
