Tex-Mex Breakfast Scramble



INGREDIENTS:

Non-Stick cooking spray
2 cups cholesterol-free egg product
1 cup 2% low fat cottage cheese
1 green bell pepper, chopped
1/2 cup chopped onions
1/2 cup shredded 2% Cheddar cheese
1/2 cup thick, chunky style salsa




DIRECTIONS:

1. Beat together the egg product and cottage cheese with whisk until well blended
and set aside.

2. Cook vegetables in a medium size nonstick skillet sprayed with cooking spray over medium-high heat 2 to 4 minutes or until crisp-tender, stirring occasionally.

3. Lower heat to medium; add in egg mixture and cheese; cook 8 to 10 minutes
or until egg mixture is set, stirring frequently. Serve topped with salsa.

Yield: 4 Servings
Serving Size: 1/4 of recipe.
