Stove Top Chicken & Mushrooms
1 tbsp olive oil
4 small boneless, skinless chicken breast
halves (1 lb total)
1 lb sliced fresh mushrooms
1 onion, finely chopped
1/2 cup chicken broth
1 garlic clove, minced
1/2 tsp dry thyme leaves
1/2 cup crumbled feta cheese
1 tbsp chopped parsley
Hot cooked brown rice, optional
Fresh cilantro leaves (optional)
1. In a large non-stick skillet heat the olive oil over medium high heat. Add the chicken and
cook 5 minutes per side or until done (165º F.). Remove chicken from skillet, reserving
drippings in skillet. Cover chicken to keep warm.
2. Add the mushrooms and onions to drippings; cook 10 minutes stirring occasionally.
Add in the broth, garlic and thyme; stir. Cook 5 minutes then stir in the cheese.
3. Top the chicken with mushroom mixture and parsley.
Serve with hot cooked brown rice if desired.
Yield: 4 Servings
