Shrimp Kabobs

Non-stick cooking spray
1 1/2 lb large raw shrimp, peeled & deveined
2 cups fresh diced pineapple
1/3 cup sugar free apricot jam
1 tbsp rice vinegar
1 tbsp low sodium soy sauce
1 tsp ground ginger
1 tsp dark sesame oil
8 12 inch metal skewers

1. Using skewers, alternately thread shrimp and fresh pineapple.

2. Preheat broiler

3. In a medium bowl, add apricot jam (cutting up any chunks), rice vinegar, soy sauce, ginger and sesame oil; stir well.

4. Coat broiler pan with cooking spray. Brush kabobs with apricot mixture and
place on broiler pan.

5. Broil 3 minutes, turn and brush with mixture. Continue broiling until shrimp are pink, about
3 more minutes. Brush mixture on one more time before serving.

Yield: 4 Servings.
Serving Size: 2 kabobs per serving
