Scalloped Potatoes & Ham

Non-Stick cooking spray
4-1/2 lbs red potatoes, cut into 1/4 inch
thick slices

1 (16 oz) carton fat free sour cream
3/4 lb (12 oz) 2% Velveeta, cut into 1/2 inch cubes
1/2 lb smoked ham, chopped
4 green onions, sliced
1/4 cup grated Parmesan cheese


1. Preheat oven to 350° F.

2. Cook potatoes in boiling water in a large saucepan 10 to 12 minutes or just until potatoes
are tender; drain. Remove 1/4 of the potatoes; place in large bowl. Add sour cream; mash
until smooth. Stir in the Velveeta, ham and onions. Gently stir in remaining potato slices.

3. Spoon into a 13 by 9-inch baking dish sprayed with cooking spray; sprinkle with the Parmesan. Bake 30 minutes or until heated through.

Yield: 16 Servings
