No-Crust Quiche

Non-stick cooking spray
2 cups egg substitute
4 frozen meatless breakfast links, sliced 1/2-inch-thick

6 fresh asparagus spears, trimmed, cut into 1/2 inch lengths

1/2 cup 2% cottage cheese
1/2 cup shredded Swiss cheese
1/4 cup finely chopped onions
1 tbsp Dijon mustard

1. Preheat oven to 350° F.

2. Combine all ingredients and pour into a 9-inch pie pan sprayed with cooking spray.

3. Bake 40 to 45 minutes or until center is puffed and top is golden brown.

Yield: 6 Servings.
Serving Size: 1/6 of recipe.
