Grilled Jamaican Beef Steaks

2 cups beef broth
1/4 cup olive oil
3 tbsp Jamaican jerk seasoning
2 tbsp balsamic vinegar
3 garlic cloves, minced
1 boneless beef top loin or beef sirloin steak,
2" thick (about 3 lbs)

1 tbsp lemon juice
1 tbsp chopped fresh cilantro

1. Stir the broth, oil, jerk seasoning, vinegar and garlic together in a shallow non-metallic dish or gallon size resealable plastic bag. Add the meat and turn to coat.
Cover the dish or seal the bag and refrigerate 8 hours, turning the steak over a few times while it's marinating.

2. Lightly oil the grill rack and pre-heat the grill to medium hot.
Remove the steak from the marinade and pour the marinade into a 1 quart size saucepan.

3. Bring marinade to a boil over medium high heat. Reduce heat to low and cook 10 minutes. Stir in the lemon juice and cilantro. Cover and keep warm.

4. Grill the steak for 28 minutes for medium rare or to desired doneness, turning once during grilling. Slice steak and serve with the lemon-cilantro mixture.

Yield: 12 Servings
Serving Size: 1/4 lb (4 oz) per serving.
