Dilled Shrimp Salad

Prep Time: 10 Minutes.
Total Time: 10 Minutes.


1/4 cup reduced fat mayonnaise with olive oil
2 tbsp light sour cream
2 tsp Dijon mustard
1/2 tsp dill weed
1 lb cooked, cleaned shrimp, chopped
1/2 cup chopped cucumbers
2 green onions, thinly sliced
4 large leaves Boston lettuce
1 lemon cut into 4 wedges


1. In a medium size bowl mix together the mayonnaise, sour cream, mustard and dill weed.

2. Add in the shrimp, cucumbers and onions. Mix together lightly and serve on the lettuce
leaves using one lettuce leaf, 1/4 of salad mixture and one lemon wedge for each serving.

YIELD: 4 equal sized servings.
Serving Size: 1/4 of recipe.
