Diabetic Salsa Chicken & Rice

4 small boneless, skinless chicken breast
halves (about 1 lb total)

2 tbsp light Italian salad dressing
1 large green bell pepper, cut in thin strips
1 large tomato, chopped
1 cup salsa, (thick and chunky variety)
1 cup 2% shredded Cheddar cheese
2 cups cooked long-grain brown rice

1. Heat salad dressing in large skillet over medium heat. Add chicken; cover.
Cook 4 to 5 minutes on each side or until lightly browned. Remove from skillet;
cover to keep warm.

2. Add peppers to skillet; cook 5 minutes, stirring frequently. Stir in tomatoes and salsa.
Return chicken to skillet; simmer, covered, over medium-low heat 10 minutes or until done (165ºF).

3. Top with the cheese; cook, covered, 4 to 5 min. or until melted. Serve over rice.
Yield: 4 servings
