Diabetic Citrus Fish Filets
1/4 cup packed brown sugar
1 tsp ground cumin
6 cod filets (1 1/2 lb total)
1/4 cup light Italian salad dressing
1/4 cup lime juice
1/2 cup orange juice
1/4 cup chopped cilantro
2 tbsp chopped mint leaves
1. In a large skillet, heat the salad dressing over medium-high heat.
Combine the brown sugar and cumin; sprinkle 2 tbsp of the sugar mixture over fish.
Place fish in skillet, sugared side down; sprinkle with remaining sugar mixture.
2. Cook 3 to 5 minutes per side or until fish flakes easily with fork.
Remove from skillet and cover to keep warm.
3. Add the lime and orange juice to skillet. Cook on medium heat until heated through,
stirring occasionally. Remove from heat. Stir in cilantro and mint. Spoon evenly over fish.
Yield: 6 Servings
