Diabetic BLT Breakfast Sandwiches
1/2 cup cholesterol-free egg substitute
2 thin multi-grain sandwich buns, toasted
(2) 2% American cheese singles
2 slices turkey bacon, cooked, cut in half
2 slices tomato
4 small salad green leaves, divided
1. Cook egg product in a non-stick skillet sprayed with cooking spray over medium heat for
3 minutes or until set, stirring occasionally.
2. Divide recipe in half and fill buns with eggs, cheese, bacon, tomato and salad greens.
YIELD: 2 Sandwiches
