Diabetic Beef & Cabbage Casserole
3/4 lb extra lean ground beef
1 medium size yellow onion, chopped
1 envelope Italian salad dressing mix
1 (28 oz) can crushed tomatoes
8 cups shredded cabbage
1 cup water
1 cup instant brown rice, uncooked
1. Brown meat and onion with the dressing mix in a large skillet or Dutch oven on
medium-high heat 4 to 6 minutes or until meat is cooked through.
2. Add in the tomatoes and cabbage; stir. Reduce heat to a simmer; cover tightly.
Cook 20 to 25 minutes or until cabbage is tender.
3. Stir in the water and rice and bring to a boil. Cover; reduce heat and cook 5 minutes.
Remove from heat; stir and cover. Let stand 5 minutes before serving.
YIELD: 4 equal size servings (Refrigerate leftovers up to 3 days, covered.)
