Diabetic Beef & Beans Casserole

1-1/2 lbs beef sirloin steak, cut into thin strips
2 slices bacon, chopped
1 onion, chopped
1 red bell pepper, chopped
1 (15 oz) can pinto beans, rinsed
1 (15 oz) can butter beans, rinsed
3/4 cup bottled barbecue sauce


1. Cook steak strips in a large deep nonstick skillet or Dutch oven over medium-high heat 3 minutes or just until no longer pink in centers. Transfer to plate.

2. Add bacon to skillet; cook over medium heat 1 minute. Stir in onions and peppers; cook 6 minutes or until bacon is done and vegetables are crisp-tender. Add beans and barbecue sauce; mix well. Simmer over medium-low heat 5 minutes, stirring occasionally.

3. Return steak and any juices from plate to skillet; cook 1 to 2 minutes or until steak strips are done, stirring occasionally.

YIELD: 6 Servings
