Curried Crab Salad
2 cups cut-up fresh fruit (such as pineapple,
cantaloupe, honeydew melon and/or strawberries)
1 (6 oz) package frozen crabmeat, thawed
3/4 cup sliced celery
1/4 cup light mayonnaise
1/4 cup plain low fat yogurt
2 tbsp skim milk
1/2 tsp curry powder
4 cups torn mixed salad greens
1. In a large bowl combine fresh fruit, crabmeat and celery; set aside.
2. In a small bowl stir together mayonnaise dressing, yogurt, milk and curry powder.
3. Divide salad greens equally among 3 salad plates. Top with crab mixture and
drizzle with dressing.
