Crockpot Lentil Soup


64 oz (8 cups) low sodium beef broth
2 garlic cloves, minced
1 tsp dried oregano leaves, crushed
3 cups sliced carrots
1 cup chopped onions
1/2 cup dry lentils
1/2 cup pearl barley


1. Place the broth, garlic, oregano, carrots, onion, lentils and barley into a 5 quart
slow cooker and stir together.

2. Cover and cook on LOW 8 to 9 hours or High 4 to 5 hours or until lentils and
barley are tender.

Yield: 8 Servings
Serving Size: 1-3/4 cups per serving.
