3 tbsp Italian salad dressing, divided
4 cups baby spinach leaves
4 small boneless skinless chicken breast halves
(1 lb total)
8 slices deli fresh smoked ham
1 cup shredded Mozzarella cheese.
1. Heat 1 tbsp of the dressing in a large oven proof skillet on medium heat.
Add spinach; cook and stir 1 minute or just until spinach is wilted.
Remove from skillet and cover to keep warm.
2. Add remaining dressing and chicken to skillet; turn chicken over to coat both sides with dressing. Cook 5
to 6 minutes on each side or until chicken is done (165° F.)
3. Top chicken with ham and cheese; cover. Cook on low heat 1 to 2 minutes
cheese is melted. Serve over spinach mixture.
Yield: 4 Servings
