Baked Salmon with Mushrooms
INGREDIENTS:

Non Stick Cooking Spray
4 salmon filets ( 1 lb total)
2 cups fresh spinach, chopped
1 cup sliced fresh mushrooms
1 tomato, chopped
1/3 cup sundried tomato vinaigrette salad dressing
DIRECTIONS:

1. Preheat oven to 375° F.

2. Place fish fillets, skin side down, in a 13 x 9 inch baking dish sprayed with cooking spray.

3. Mix together remaining ingredients and spoon over fish.
Bake 20 to 25 minutes or until fish flakes easily with fork.

YIELD: 4 Servings.
Serving Size: 1 filet per serving.
